So as the summer days are drifting away, we’re sharing some of our best rawsome mocktail recipes to make your summer drinks a whole lot tastier and maybe even a little bubblier. Tell me more, tell me more! Could we add any more ‘Summer Nights’ Grease references? Probably.
Alright, 70s movie references aside, here’s three rawsome recipes we think you’ll love.
A light and refreshing spritz with zesty lemongrass, mint, and coconut water. Get your spritz on after a long day in the sun.
Ingredients:
2 stalks of lemongrass
1 cup water
1 cup sugar
1 cup fresh mint, roughly chopped
1/2 cup coconut water
1/2 fresh lime, juiced
Sparkling water and extra lime slices to top and garnish
Method:
- Peel outer leaves from lemongrass and using a rolling pin, bash the soft inner stalks until they are bruised and fragrant. Add to small saucepan with water and sugar.
- Bring to the boil and then remove from the heat. Strain out the lemongrass and cool.
- Fill a tall glass with ice, adding one or two tsp of your lemongrass syrup. Add mint, coconut water and lime juice, leaving space to top with some sparkling water.
- Muddle and serve with a lime slice.
Think ginger spice meets tropical vibes! This mule recipe calls for coconut water, pineapple and lime juice with a hit of fresh ginger. Delish!
Ingredients:
Small thumb of fresh ginger, minced
1/2 cup coconut water
1/2 cup frozen pineapple chunks
1/2 lime, juiced
Method:
- Add all ingredients to a high speed blender and blitz!
- Serve in a tall glass garnished with a twist of lime and some mint leaves.
This fruity mocktail combines fresh raspberries, mint, and coconut water for a mojito-inspired treat without the rum.
Ingredients:
1/4 cup fresh mint leaves
1/4 cup raspberries (fresh or frozen)
1/4 – 1/2 cup coconut water
1 lime, juiced
sparkling water
Method:
- Place raspberries in a bowl and mash with a fork.
- Strain pips out through a sieve. You should end up with about 1/2 tbsp of berry puree.
- Add the puree, lime juice and mint to a tall glass.
- Fill the glass with ice pour over coconut water to your taste.
- Top with sparkling water and garnish with a mint leaf or extra berries.
