Ingredients

  • ¾ cup (about 4.5 oz) 80% dark chocolate, chopped
  • ¼ cup (2 fl oz) Raw C Organic Virgin Coconut Oil, softened
  • ½ cup coconut sugar (or white sugar)
  • 1 cup almond flour
  • ¼ cup unsweetened cocoa powder
  • ½ cup dark chocolate chunks
  • 3 medium eggs
  • 1 Pinch of kosher salt

Method

  • 1.
    Preheat your oven to 350°F.
  • 2.
    Line an 8x8-inch brownie pan with parchment paper.<
  • 3.
    In a heatproof bowl over simmering water, melt the chopped dark chocolate and coconut oil together. Stir until smooth, then remove from heat and set aside to cool slightly.
  • 4.
    In a separate large bowl, whisk the eggs and sugar together for 5–7 minutes until the mixture is pale and fluffy.
  • 5.
    Gradually pour the melted chocolate mixture into the egg mixture, stirring gently until well combined.
  • 6.
    Sift in the almond flour, cocoa powder, and salt. Add half of the dark chocolate chunks. Fold the mixture until smooth and evenly combined.
  • 7.
    Pour the batter into the prepared pan and sprinkle the remaining chocolate chunks on top.
  • 8.
    Bake for 18–20 minutes, or until a toothpick inserted into the center comes out with moist crumbs for a fudgy texture, or slightly wet batter for a gooey finish.
  • 9.
    Allow the brownies to cool in the pan before slicing.
  • 10.
