Creamy MCT Oil Infused Pesto

Ingredients

  • 2 cups fresh basil leaves
  • ¼ cup Raw C MCT Premium Liquid Coconut Oil
  • ¼ cup olive oil
  • ¼ cup pine nuts
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic
  • 2-3 tablespoons lemon juice
  • 1 Salt and pepper to taste

Method

  • 1.
    In a food processor or blender, combine the basil leaves, pine nuts, and garlic. Pulse until finely chopped.
  • 2.
    Gradually add the MCT oil and olive oil, blending until smooth.
  • 3.
    Stir in the Parmesan cheese, lemon juice, salt, and pepper.
  • 4.
    Blend again until fully combined.

    Enjoy this versatile pesto as a dip, spread, or sauce.
