Chocolate Peanut Butter Balls

Ingredients

  • 2 tablespoons Raw C Organic Virgin Coconut Oil
  • 1 cup pitted dates
  • 1 tablespoon raw honey
  • 1 tablespoon smooth peanut butter
  • 2 tablespoons cacao powder
  • 1/2 cup almond meal
  • 1/2 cup raw cashews (soaked for 4 hours)
  • 1/2 cup raw almonds (soaked for 4 hours)
  • 1 Up to 1 cup filtered water (as needed)

Method

  • 1.
    Soak the raw cashews and almonds in water for 4 hours.
  • 2.
    Drain the soaked nuts and place them in a blender or food processor along with the dates, honey, peanut butter, cacao powder, almond meal, and melted coconut oil.
  • 3.
    Blend until the mixture reaches a chunky, cookie-dough-like consistency. Add filtered water gradually, as needed, to help blend.
  • 4.
    Roll the mixture into small, evenly sized balls.
  • 5.
    Place the balls on a parchment-lined tray and refrigerate until firm to the touch.
  • 6.
    Optional: For a refreshing twist, add some blueberries or raspberries to the mixture before blending.
