Ingredients
- 2 tablespoons cocoa powder
- 2 tablespoons melted Raw C Organic Virgin Coconut Oil
- 1/3 cup chocolate protein powder
- 1/3 cup nut butter of your choice (e.g., almond, peanut)
- 1/4 cup sugar-free maple syrup
- 1/3 cup unsweetened shredded coconut
- 1/2 package (approximately 2.8 oz) gluten-free shortbread cookies, crumbled
- 3-4 tablespoons rum (optional)
- Additional 2.8 oz gluten-free shortbread cookies, as needed, to achieve desired consistency
Method

1.In a medium mixing bowl, combine the cocoa powder, chocolate protein powder, crumbled cookies, and shredded coconut. Mix well.

2.Add the melted coconut oil, nut butter, maple syrup, and rum (if using) to the dry ingredients. Stir until the mixture is smooth and well combined.

3.If the mixture is too soft to roll into balls, add more crumbled cookies until the desired consistency is achieved.
